Blueberry Salmon

Ingredients
- 1/2 cup fresh crushed pineapple
- Fresh ground black pepper
- 1 small fresh Anaheim Chili Pepper
- 2 fresh limes
- 2 salmon filets, 6 to 8 ounces each
- 1/2 fresh Ruby Red grapefruit
- 1 cup blueberries
- 3/4 cup brown sugar
- 1/2 teaspoon chili powder
- Preheat oven to 425 degrees Fahrenheit.
- Place the Flexipat® on the Perforated Baking Sheet. Spread pineapple in the Flexipat® and sprinkle liberally with fresh ground pepper.
- Using the Demarle Différence® Santoku Chef’s Knife, slice the chili into very thin rings and arrange over the pineapple. Squeeze the juice of two limes over the chili slices.
- Lay the salmon filets over the sliced chili.
- Peel and trim the grapefruit using the DD® Paring Knife, and cut into bite size chunks. Arrange over salmon.
- Top with blueberries. Sprinkle with brown sugar and chili powder.
- Bake until top is bubbly and salmon is opaque.
- Serve with rice and fresh steamed vegetables.
